Baretto, a laid-back yet polished new restaurant found a short walk from central Monte-Carlo, had been open for just over a month when Monaco Life went along to meet the Bassos, the husband-and-wife team behind the morning-to-night address.
A life’s mission
Fiorenzo, who is originally from Italy, returned to Monaco in 2016 after working in the Principality between 2008 and 2012. He knows the local gastronomy scene well, having spent a good part of his culinary career here, and it was the combination of these experiences with his love of travel and Italian cuisine that inspired the creation of Baretto.
“Having my own restaurant was one of my life’s missions,” shares Fiorenzo.
The chef noticed a change in customers’ demands and expectations in the years after the Covid pandemic, and wisely decided to integrate this shift into Baretto.
“People want something normal, easy and casual; just to enjoy good food and each other’s company,” he explains. “One of the first dishes I imagined for Baretto was a classic spaghetti with tomatoes and basil. It sounds simple, but mastering it is challenging, and finding this dish at a reasonable price in Monaco isn’t easy.”
Simplicity is key at Baretto, and this essence is carried through the menu into the relaxed and informal setting of the restaurant.
“What’s important for us is that people feel at ease when they come to Baretto, like they’re at home enjoying a family-like atmosphere,” says Cherine. “As long as people are happy, we’re happy too.”
All-day menu
What sets Baretto apart is its all-day dining experience. Starting with breakfast pastries, Italian coffee and even a full English breakfast option, the menu evolves throughout the day. Lunchtime brings fresh dishes like the pasta of the day, which changes daily, giving customers something new to try every time they visit. The entire menu also changes with the seasons. Right now, it’s all about truffles and wild mushrooms, and these ingredients are featured in several dishes when Monaco Life visits.
“We really try to do everything,” laughs Cherine.
Baretto’s kitchen uses fresh ingredients sourced daily from a farm near Ventimiglia.
“We prefer to work with small suppliers,” explains Fiorenzo, adding that this focus on fresh ingredients sometimes means that certain dishes might not be available once they run out for the day.
“At first, people weren’t happy when meals were unavailable, but now they understand it means the ingredients are fresh,” he says.
Baretto’s secret
The name Baretto translates to ‘little bar’ in Italian, and at first glance, it may seem to be just that: a small counter coffee and wine bar. But beyond the counter, the space opens into an intimate dining space accompanied by an outdoor area with high-top tables. It suits the Bassos’ desire for a friendly and welcoming vibe.
Looking ahead, the couple hopes to open more Baretto locations and expand the brand.
“Hopefully, many more Barettos will come!” says Cherine with a smile.
Baretto is open Monday through Friday from 7.30am to 10pm, and on Saturdays from 8.30am to 10pm. The restaurant is closed on Sundays.
