VistaJet partners with Mauro Colagreco for exclusive in-flight Michelin-star dining

VistaJet has announced an exciting new partnership with three-Michelin-starred chef Mauro Colagreco, bringing the acclaimed flavours of his renowned restaurant, Mirazur, to the skies.

Unveiled at an exclusive press lunch at Mirazur during the recent Monaco Yacht Show, VistaJet’s latest partnership with three-Michelin-starred chef Mauro Colagreco brings a selection of curated menus that capture the flavours of the French Riviera, elevating in-flight dining to new levels of sophistication.

As part of its ongoing effort to enhance the passenger experience, VistaJet has increasingly collaborated with top culinary talents. The partnership with Colagreco’s Mirazur marks the latest addition, offering passengers a taste of one of the world’s most celebrated restaurants, whether in the air or at their destination.

“Our goal is to create a journey so seamless and luxurious that you never want to leave,” said VistaJet’s Global Chief Marketing Officer, Matteo Atti.

Perfecting the art and science of dining at high altitude 

For over 20 years, VistaJet has fine-tuned every aspect of in-flight comfort, and with Colagreco’s influence, the company is pushing the boundaries of in-flight dining. The new menu features three exclusive à la carte options, including the first plant-based offering and a picnic selection ideal for summer travel.

“We’ve been on a journey to transform private dining in the air, making it something truly memorable,” said Diego Sabino, Vice President of Private Dining at VistaJet. “We’ve explored the art and science of dining at high altitude, crafting dishes that our members can savor together onboard, whatever the occasion.”

As Matteo Atti explained, the challenge was to recreate a Michelin-starred dining experience at 40,000 feet. “Our staff is extensively trained to deliver a high-quality dining experience that feels as close as possible to a professional kitchen, even in the skies,” he said.

The chefs at Mirazur, meanwhile, spent considerable time developing a menu that could be prepared by non-chefs at high altitudes, while still adhering to the restaurant’s commitment to fresh, seasonal ingredients. “We focused on creating dishes that work well on a plane but remain true to our core values,” explained Chef Paloma Boitier. “For example, in my favourite dish – the lamb chop with lamb shoulder ravioli – we use every part of the animal. We make sure nothing goes to waste, even in the skies.”

Weeks of preparation go into each menu, ensuring that flavours are preserved despite the limitations of space and altitude, where taste and salt preferences may change. “We meticulously test everything, including the exact timing required to heat each item in the plane’s ovens—since open flames aren’t allowed onboard. That’s how we can maintain the aromas and flavours of the dishes, specifically tailored for VistaJet,” added Atti.

Mirazur is now one of over 7,000 VistaJet suppliers across more than 2,000 airports, including Monaco’s Beefbar and Tosca di Angelo at the Ritz Carlton Hong Kong, allowing passengers to fully customise their meals in advance. “Once you book a flight, you receive a link to choose from a selection of meal providers,” said Atti. “If you don’t make a selection 48 hours before the flight, our private dining team will propose options based on your previous preferences, always ensuring multiple meal options on board in case you change your mind.”

Tailored menus for top-tier passengers, including pet-friendly options

VistaJet’s collaboration also includes a nutritionist service for top-tier members. This feature, designed for passengers flying over 50 hours per year, tailors menus to individual dietary needs, allergies, or health goals. “Whether it’s for athletes or CEOs heading to important meetings, we ensure passengers feel their best when they arrive,” noted Atti. VistaJet even offers specially curated menus for pets, recognising the importance of making long flights comfortable for every member of the family.

The partnership between VistaJet and Mauro Colagreco marks a significant step in enhancing the private aviation experience, merging world-class cuisine with luxury travel.
